A delicious one-pan meal featuring tender chicken thighs glazed with honey BBQ sauce, fluffy rice, and vibrant mixed vegetables.

- 1 lb boneless, skinless chicken thighs or breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- ½ cup BBQ sauce
- ¼ cup honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, add a splash of oil and sear the seasoned chicken for about 5 minutes on each side until beautifully browned.
- While the chicken cooks, whisk together the BBQ sauce and honey in a small bowl.
- Pour the honey BBQ mixture over the chicken. Then, sprinkle the rice evenly over the top and pour the chicken broth in.
- Bring the mixture to a gentle simmer. Cover the skillet and reduce the heat to low. Let it cook undisturbed for about 20 minutes.
- During the last five minutes of cooking, sprinkle the mixed vegetables on top. Cover again to steam them perfectly.
- After 5 minutes off the heat, fluff the rice to mix in the chicken and vegetables. Serve warm.
Notes
Marinate the chicken in BBQ sauce and honey beforehand for extra flavor. Serve with sides like coleslaw or garlic bread.
