Description

A delightful and nutritious dish featuring marinated chicken in a creamy Cajun sauce served over fluffy rice, perfect for family dinners or meal prepping.


Ingredients

  • 1 Tsp Black Pepper
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Oregano
  • 1 Tsp Thyme
  • 1 Tsp Paprika
  • 1 Tsp Chilli Powder
  • 800 g Chicken Breast (cut into halves)
  • 1.5 Tsp Cajun Seasoning Mix (divided)
  • 2 Tsp Olive Oil
  • 25 g Grass Fed Butter for Cooking
  • 1 Medium Red Onion (chopped)
  • 45 Garlic Cloves (chopped)
  • Fresh Parsley (for garnish)
  • 15 g Grass Fed Butter
  • 250 ml Milk
  • 150 g Light Cream Cheese
  • 40 g Parmesan

Instructions

  1. Marinate the Chicken: In an airtight glass container, combine chicken breasts, 1.5 tsp Cajun seasoning, and olive oil. Marinate overnight in the fridge.
  2. Sear the Chicken: Heat skillet over medium-high heat, melt butter, and cook marinated chicken until golden brown. Let rest and then slice.
  3. Sauté Onion and Garlic: In the same skillet, sauté the chopped red onion and garlic until fragrant.
  4. Add Flavor to the Rice: Stir in the remaining Cajun seasoning and add cooked rice, mixing well.
  5. Create the Creamy Sauce: Reduce heat, add remaining butter, gradually whisk in milk, and mix in cream cheese and parmesan until smooth.
  6. Plate It Up: Layer Cajun rice, top with sliced chicken, drizzle creamy sauce, and garnish with parsley.

Notes

Make-Ahead Tip: Marinated chicken can stay in the fridge for up to 24 hours. Adjust spice levels as desired.
