- 2 cups cooked chicken, diced
- 1 cup quinoa or brown rice, cooked
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, sliced
- 1 bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and sliced
- 1/2 cup tzatziki sauce
- Olive oil, salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large bowl, combine the cooked chicken, quinoa or rice, cucumber, tomatoes, onion, and bell pepper.
- Drizzle with olive oil, and season with salt and pepper to taste.
- Toss everything together until well mixed.
- Serve in bowls, topping each with crumbled feta cheese, sliced olives, and a generous dollop of tzatziki sauce.
- Garnish with fresh parsley before serving.
