Description

A vibrant and nutritious Greek Chicken Bowl featuring juicy chicken, nutty quinoa, crisp vegetables, and a creamy tzatziki sauce.


Ingredients

  • 2 cups cooked chicken, diced
  • 1 cup quinoa or brown rice, cooked
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • 1 bell pepper, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/2 cup tzatziki sauce
  • Olive oil, salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large bowl, combine the cooked chicken, quinoa or rice, cucumber, tomatoes, onion, and bell pepper.
  2. Drizzle with olive oil, and season with salt and pepper to taste.
  3. Toss everything together until well mixed.
  4. Serve in bowls, topping each with crumbled feta cheese, sliced olives, and a generous dollop of tzatziki sauce.
  5. Garnish with fresh parsley before serving.

Notes
