A savory and healthier twist on traditional meatloaf, featuring ground chicken, roasted garlic, and nutty Parmesan.

- 1 lb ground chicken
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (plain or Italian-seasoned)
- 2 large eggs
- 1 medium onion, diced
- 2 tbsp soy sauce
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Sauté the diced onions in a medium skillet over medium heat for about 5 minutes until soft.
- In a large mixing bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, and pepper. Add half of the grated Parmesan cheese and mix until well combined.
- Shape the mixture into a loaf form in the greased baking dish.
- Sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for 45-50 minutes or until the internal temperature reaches 165°F (74°C). Allow to rest for 10 minutes before slicing.
Notes
For a flavor boost, consider adding a dash of paprika or Italian seasoning on top.
