Description

Tender chicken infused with fajita spices, paired with vibrant bell peppers and onions, all cooked to perfection in a slow cooker.


Ingredients

Scale
  • 2 lbs boneless chicken breasts
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 can diced tomatoes with green chilies
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: shredded cheese, sour cream, avocado

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Layer sliced bell pepper and onion on top of the chicken.
  3. Sprinkle fajita seasoning evenly over the mixture.
  4. Pour diced tomatoes with green chilies over the top.
  5. Add salt and pepper to taste.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  7. Once cooked, shred the chicken with forks and mix everything together.
  8. Serve in warm tortillas with optional toppings.

Notes

For make-ahead preparation, layer ingredients in the crockpot and store in the fridge overnight. Adjust cooking time for frozen chicken breasts.
