Description

Ingredients

- 2 lbs boneless chicken breasts
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 packet fajita seasoning
- 1 can diced tomatoes with green chilies
- Salt and pepper to taste
- Tortillas for serving
- Optional toppings: shredded cheese, sour cream, avocado
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Layer sliced bell pepper and onion on top of the chicken.
- Sprinkle fajita seasoning evenly over the mixture.
- Pour diced tomatoes with green chilies over the top.
- Add salt and pepper to taste.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Once cooked, shred the chicken with forks and mix everything together.
- Serve in warm tortillas with optional toppings.
Notes
For make-ahead preparation, layer ingredients in the crockpot and store in the fridge overnight. Adjust cooking time for frozen chicken breasts.
