  • 1/4 teaspoon black pepper
  • 1 bell pepper, sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, with juices
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 8 oz penne pasta
  • Fresh parsley, chopped for garnish

Instructions

  1. Season the Chicken: In a large bowl, season the chicken breasts with olive oil and spices.
  2. Brown the Chicken: Preheat a large skillet and brown the seasoned chicken for 2-3 minutes on each side.
  3. Layer in the Slow Cooker: Place the browned chicken in the slow cooker and add bell peppers, onion, and garlic.
  4. Add Tomatoes and Broth: Pour in the diced tomatoes and chicken broth.
  5. Cook to Perfection: Cover and cook on low for 4-5 hours or high for 2-3 hours.
  6. Shred the Chicken: Remove cooked chicken and shred, then return to the pot.
  7. Stir in the Cream and Cheese: Add heavy cream and Parmesan, stirring until melted.
  8. Cook the Pasta: Prepare pasta according to package directions; drain and mix with the sauce.
  9. Heat Together: Allow everything to heat on low for another 15-20 minutes.
  10. Serve and Garnish: Serve in bowls, garnished with fresh parsley.

For a vegetarian option, substitute chicken with chickpeas or mushrooms and use vegetable broth.
