- 1 lb steak (sirloin or ribeye)
- Salt and black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded or freshly grated
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Bring a large pot of salted water to a boil. Add the tortellini and cook according to packaging instructions, about 3-5 minutes until they float. Drain and set aside.
- Pat the steak dry, season with salt, black pepper, garlic powder, and smoked paprika.
- Heat olive oil in a skillet over medium-high heat; cook the steak for 4-5 minutes on each side for medium-rare. Let rest before slicing.
- Melt butter in the same skillet, sauté minced garlic until golden, then add heavy cream and whole milk, whisking to combine.
- Stir in parmesan, adjust seasoning with salt and pepper, add red pepper flakes if desired.
- Gently fold in cooked tortellini and sliced steak, warming through for 1-2 minutes.
- Plate, garnish with parsley and cracked black pepper, then serve.

Make-ahead tips: Cook the tortellini and slice the steak a day in advance. Let steak rest for maximum juiciness.
