Ingredients

  • 20 oz cheese tortellini
  • 1 lb steak (sirloin or ribeye)
  • Salt and black pepper
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to packaging instructions, about 3-5 minutes until they float. Drain and set aside.
  2. Pat the steak dry, season with salt, black pepper, garlic powder, and smoked paprika.
  3. Heat olive oil in a skillet over medium-high heat; cook the steak for 4-5 minutes on each side for medium-rare. Let rest before slicing.
  4. Melt butter in the same skillet, sauté minced garlic until golden, then add heavy cream and whole milk, whisking to combine.
  5. Stir in parmesan, adjust seasoning with salt and pepper, add red pepper flakes if desired.
  6. Gently fold in cooked tortellini and sliced steak, warming through for 1-2 minutes.
  7. Plate, garnish with parsley and cracked black pepper, then serve.

Notes

Make-ahead tips: Cook the tortellini and slice the steak a day in advance. Let steak rest for maximum juiciness.
