Description

Indulge in the comforting flavors of Cheesy Potato Burritos, filled with crispy tater tots, seasoned ground beef, and rich cheeses.


Ingredients

  • 1 pound ground beef (or plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup Taco Bell chipotle sauce
  • 6 large flour tortillas
  • Salt and pepper to taste
  • Diced tomatoes, chopped green onions, cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and cook tater tots as per package instructions.
  2. Brown ground beef in a large skillet over medium heat, seasoning with salt and pepper.
  3. In a mixing bowl, combine cooked beef, tater tots, cheddar, and Monterey Jack cheeses.
  4. Warm flour tortillas in a skillet or microwave for 10-15 seconds.
  5. Spoon filling onto tortillas, drizzle with chipotle sauce, and add sour cream.
  6. Fold sides over filling and roll tightly. Place seam-side down in a greased baking dish.
  7. Sprinkle additional cheese on top and bake for 5-7 minutes until cheese is melted.
  8. Garnish with diced tomatoes, green onions, and cilantro. Serve hot.

Notes

Customize the filling with black beans or vegetables for added nutrition. Make ahead and store uncooked burritos in the refrigerator for up to 2 days.
