Description

A creamy, indulgent one-skillet meal featuring rotini pasta, juicy chicken, and a rich blend of cheese and Cajun spices.

Ingredients

Scale
  • 1 pound Boneless Skinless Chicken Breasts (cut into bite-sized chunks)
  • 12 oz Rotini Pasta (or substitute with penne, farfalle, or fusilli)
  • 2 tablespoons Olive Oil (or canola/vegetable oil)
  • 2 tablespoons Cajun Seasoning (or milder spice mix)
  • 1 teaspoon Garlic Powder (or fresh minced garlic)
  • 1/2 teaspoon Onion Powder (optional)
  • Salt and Pepper (to taste)
  • 4 cloves Garlic (minced)
  • 1 tablespoon Butter (or olive oil for dairy-free)
  • 1 cup Heavy Cream (or light/coconut cream)
  • 1/2 cup Chicken Broth (or vegetable broth for vegetarian option)
  • 1 cup Mozzarella Cheese (shredded)
  • 1/2 cup Parmesan Cheese (grated)
  • 1/2 cup Cheddar Cheese (shredded)
  • 1/4 cup Fresh Parsley (chopped)

Instructions

  1. Cook the Pasta: Boil a large pot of salted water, add rotini, and cook until al dente. Drain and set aside.
  2. Sauté the Chicken: Heat olive oil in a large skillet over medium-high heat, add chicken chunks, and season. Cook until golden, about 5-7 minutes.
  3. Infuse Garlic: Stir in minced garlic and butter, cooking until fragrant.
  4. Make the Sauce: Add heavy cream and chicken broth; simmer until thickened.
  5. Add the Cheese: Lower the heat and stir in mozzarella, Parmesan, and cheddar until melted.
  6. Combine Pasta and Sauce: Fold in cooked rotini, adding reserved pasta water if necessary to adjust sauce consistency.
  7. Garnish and Serve: Top with fresh parsley and serve immediately.
