Description

Ingredients

  • 12 oz pasta (penne or rotini)
  • 1 lb smoked sausage, sliced (kielbasa or andouille)
  • 1 tablespoon Cajun seasoning
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or pepper jack)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions in a large pot until al dente. Drain and set aside.
  2. In the same pot, add the sliced sausage and brown it over medium heat for 5-7 minutes.
  3. Add the diced bell peppers, onion, and minced garlic, and sauté for 4-5 minutes until softened.
  4. Sprinkle in the Cajun seasoning, stir, then pour in the heavy cream and bring to a gentle simmer.
  5. Fold in the cooked pasta and shredded cheese, stirring until the cheese has melted and coats the pasta.
